But the name “Kisser” has a fun twist, combining the Japanese term kissaten with some playful sports slang. Horii explains, “It’s like, ‘Pow! One of the standout aspects of Kisser is that a lot of the produce used in creating their dishes comes directly from the couple’s own farm. This is an important detail, as both the Middle Tennessee and Japanese climates are perfectly suited for growing a wide variety of delicious vegetables and herbs. “A lot of the vegetables and herbs come from our little farm,” Horii shared. “The growing climates between here and Japan are so similar, it’s like a dream for Japanese ingredients. Shiso grows like a weed here. In Japan, it’s an expensive herb.” This dedication to fresh, local ingredients plays a huge role in the flavor and authenticity of their menu.

From Los Angeles to Nashville

The talented pair originally met while working as chefs in Los Angeles, where Horii’s family owns a sushi restaurant. When the couple decided to open Kisser, it marked a new chapter in their culinary careers—one that they have crafted together for the first time. Hosting this unique blend of Japanese cuisine with a Nashville twist demonstrates their talents and passions perfectly.

What it Takes to Make the List

To land a spot on Food & Wine’s prestigious Best New Chefs list, chefs must have been in charge of a kitchen or pastry program for five years or less. It’s a glowing recognition that places them among an elite group of culinary geniuses.
